I have several pieces of the Tools of the Trade Belgique series from Macy's. This is the first piece I've bought with the new silicone handles. They're nice and comfortable, but I miss the copper bottoms that these pans used to have.

Still, this one has an encapsulated aluminum core, covered by thin but mirror-perfect 18/10 stainless steel, giving it a nice heft. The bell shape is for heat preservation, and it's also good for fitting a big serving spoon in to stir. The pan is versatile for solids, good for rice and pasta dishes, all the way to soups. This is a pleasant size to cook in, and the thick bottom means you can brown food and then add sauce to braise, boil or steam. You can finish off what you start on the stove in the oven, but it's only safe to 350°F. Slow-roasting and gentle baking is the way to go. The metal is thin, especially the lid and sides, so be careful; you've got to keep things moist to avoid scorching in the oven, and you don't want to drop this pan or bang it around in the dishwasher.

It's becoming my new casserole pan, and a real bonus is the oven-ready lid, so there's no need to use aluminum foil if you want things to stay moist. The lid has two little drain holes to let out excess moisture, though the pan can be awkward to strain grease into a sink, for example.

Sauteuses generally cost much more; Macy's seems to have folded the once independent Belgique items into their bargain line. They're not really the same as the older Belgiques, but much better than the rest of the Tools of the Trade. Next up for this pan: round lasagna!

"This is a great set for the money. I bought mine at Macy's on sale the day after Christmass for .00. The only thing I can complain about are the fry-pans. They are tappered and shallow; look like small woks. Beside that I like them very mutch. They heat evenly and clean-up nicely. Even at the 9.00 retail price you can't go wrong. "I've been using this set for about 1 year now and have used the set on both gas and electric stoves. On electric, the set heats up decently fast and cooks pretty evenly, you just have to be careful not to use the burner on high, as it will potentially warp the aluminum disk on the base. On gas, the set is great - even cooking, fast boiling, and no problems with using it on high heat. The set works great for cooking just about anything I've tried. My biggest problem is that the handles heat up a fair amount if cooking something on high heat or for extended periods of time. The silicone rubber grip doesn't cover the entire handle, so the exposed metal can get pretty hot (I haven't burned myself, but there may be potential to). Just use potholders if boiling water, etc. Overall it is a good buy - a great price for a great looking set that performs well.
Also note - there are two types of sets out there- the copper-bottom has all-metal lids. The aluminum-disk bottom has metal rimmed glass lids (which is what I've been using). The glass is great since you can still see when the lid's on."
